There are a few ways to use these trays.
Drip Tray This is common when you have indoor bonsai and want to water it, but not let it sit in the sink to drip dry. Simply place the pot in the tray after watering and a quick draining. The tray will collect any remaining drips. The remaining water in the tray will add humidity to the area as the water evaporates.
Humidity Tray A humidity tray is commonly used on small shohin or mame trees to help keep them from drying out between waterings. Substrate such as lava is placed in the tray to the top. The lava prevents the pot's roots from sitting in water, but the root commonly leave the holes in the bottom of the pot to pull water from substrate. You must check bonsai in humidity trays a few times a year to trim the roots when necessary.

Current production Bonsai Shoes are made from premium PETG which provides excellent water and chemical resistance in combination with good UV resistance and strength. Bonsai Shoes are also excellent in cold weather (only about 10%-15% more brittle) and act as an insulator from both extreme heat and cold which protect roots from extremes.
The "shoe" sizes correspond to the number of inches each tray is at it's largest Exterior dimension. Size 10 pots are 10" wide, size 8 are 8" wide and so on.
